Choose-your-own adventure protein salad, my favorite fast dinner of all time with whatever you have in the kitchen.
INGREDIENTS
choose any of the following:
greens:
spinach
arugula
kale
nuts & seeds:
pepita seeds
sunflower seeds
pine nuts
pistachio nuts (shells)
veggies:
cucumber
carrot
protein:
spicy tuna
smoked salmon
bbq tempeh
dressing:
any salad dressing
olive oil & vinegar (ACV or red wine)
DIRECTIONS
Toss everything but protein together, then scoop protein on top. Enjoy!
